Buoyed by consecutive wins against the Roosters and the Knights, the Sharks headed to Townsville confident of bringing the Cowboys' 11-game unbeaten run to a halt.
Without playmaker Johnathan Thurston, the hosts shot out to an 18-nil lead and looked in little danger heading into the half-time break.
But three straight tries to the Sharks saw them again well entrenched in the contest, before Ricky Leutele's late four-pointer edged the side ahead to seal a dramatic win away from Remondis Stadium.
